Vegetarian Slow Cooker Chili | Suite101.com

This vegetarian chili is hearty and filling. It makes 4 servings. The best part is it cooks up in about 5 hours in the crock pot with no hassle.

This vegetarian chili is prepared in the crock-pot. It is simple to make and the taste it out of this world. With fall just around the corner, this chili would be great to come home to on a cold day.

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 1 chopped green bell pepper
  • 2 tablespoons finely chopped jalapeno pepper
  • 1 clove minced garlic
  • 1 can crushed tomatoes
  • 1 can black beans, rinsed and drained
  • 1 can garbanzo beans, rinsed and drained
  • 1 cup whole kernel corn
  • 1/4 cup tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon dried basil
  • 2 teaspoons chili powder
  • Pinch of black pepper

Directions:

  1. Heat oil in large skillet over medium-high heat. Add onions, jalapenos, bell peppers and garlic. Cook and stir 5 minutes.
  2. Transfer vegetables to slow cooker.
  3. Add remaining ingredients.
  4. Heat on LOW for 5 hours.

Optional Toppings for Vegetarian Chili

This chili is great by itself, but serve with optional toppings such as sour cream or cheddar cheese. Even though the chili already has onions, fresh purple onions also make a great topping. It adds a great texture to the chili.

Side Dishes to Serve with Vegetarian Chili

Chili is a meal in itself, but it still needs some side dishes. Consider serving a large leafy green salad with a choice of dressing.

Serve with a side of unsalted saltine crackers or oyster crackers.

Alterations

If chili seems too thick after cooking in the slow cooker, add water.

Use the Leftover Chili

Use leftover chili to make a chili cheese burrito wrap.

Chili Cheese Burrito Wrap

Ingredients:

  • Leftover vegetarian chili
  • Tortilla
  • Cheese
  • Sour cream
  • Lettuce
  • 1/4 cup corn chips

Directions:

  1. Heat chili and cheese together.
  2. Spread onto tortilla.
  3. Add lettuce, sour cream and corn chips.
  4. Fold like a burrito.
  5. Enjoy!

Add salsa or hot sauce to give this wrap a fiery kick.

Leftover chili can be used to make nachos.

Leftover Chili Nachos

Ingredients

  • Leftover chili
  • Shredded cheddar cheese
  • Sliced jalapenos
  • Sour cream
  • Diced tomatoes
  • Tortilla chips

Directions:

  1. Preheat oven to 350?.
  2. Place tortilla chips and leftover chili mixture and shredded cheese on baking sheet.
  3. Bake for 10 min. or until cheese is melted.
  4. Remove from oven.
  5. Add sour cream, diced tomatoes, and sliced jalapenos to top.
  6. Serve with salsa.

There are so many different ways to enjoy this delicious vegetarian chili from in a bowl to over tortilla chips. Experiment with this recipe and find variations that suit your cooking style.
